This week, Roy & RT's Kitchen & Garden is back to delight you with their
many homemade creations.
Through the generous contributions from the Riverdale Park Town Council and
the facilitation of the Maryland State Farmers Market Association, the
Maryland Market Money program is up and running again. Our new match amount
for the Outdoor season is up to $7 for each $7 spent at the market.
You won't see at market this week: We expect Peachy Family Dairy back next
week with their delicious goat products, Jack Creek Plants & Red Chimney
Farm. Mystic Water Soap is on weather watch so we don't know yet whether
they'll be at the market tomorrow. Sweet Tease Bakery is due back on August
6.
Feature Recipe: Zucchini boats (everything can be found at Riverdale
Farmers' Market!)
5 - 6 cloves garlic
1/2 onion
3 medium zucchini
1 package hot Italian sausage (or sweet Italian if you don't like hot)
1 -2 tomatoes
salt and pepper to taste
1/4 cup fresh basil, sliced thin
1/2 cup parmesan or reggiano cheese, grated or minced
Grated mozzarella
Take the casings off the sausage (very simple, just cut it with the tip of
your knife and peel it off), and chop them up a bit. Add them to a good
sized fry pan with minced garlic and diced onion. Cook this, stirring
occasionally to break up the meat into smaller bits. While this is
cooking, slice the zucchini lengthwise in half. Scoop out the centers with
a spoon (you want to be careful not to pierce the skin). Chop up the
zucchini centers and add to the sausage mix. Chop up the tomatoes and add
them to the sausage mix. Salt and pepper to taste. When everything is
cooked through, turn the heat down and add the basil and cheese to the mix,
stir it in thoroughly and turn the heat off.
Preheat the oven to 400.
Lay the zucchini shells on a cookie pan, sliced side up. Spoon the sausage
mix into the shells. If you have leftover sausage mix, put it in a
oven-proof dish. Put everything into the oven and cook for about 20
minutes. Pull them out long enough to sprinkle mozzarella on top of the
sausage, and then cook for another couple minutes.
