There is also the option of vermicomposting.  There's an excellent book at the library called 'Worms Eat My Garbage', and also there's lots of info on the web. We are hoping to set up our worm bin soon!  This is great for kitchen scraps (but not much in the way of meat & dairy) that I would hesitate to put into an outside bin because of the rodent issues we get here in Urburbia.
